Elk Tidbits in Prune Sauce

2 Elk backstraps
4 tbsp bacon fat
1 can pitted plums
2 Tbsp. garlic power
Salt & Pepper to taste
Heat the bacon drippings in a deep fryer until hot. Combine all dry ingredients in a brown paper bag and shake well to mix. Cut backstraps into fork size chunks. Saute elk until it is barely pink.
Blend plums and prunes into a sauce and heat in microwave
Serve elk Tid Bits on a platter covered with prune sauce.
